Out in the bee-buzzy elderflower plantation this week gathering the flowers to go in our delicious Apple Juice and Elderflower; this is everybody’s favourite job, out in the sunshine. Of course the elderflowers, being capricious, arrive too early for the apples but we confound them by vacuum-packing and freezing them ready for adding to the lovely Discovery juice about eight weeks later. Some producers preserve their elderflowers in sugar syrup but we don’t do that because we don’t add sugar to anything!
